At the Mariposa Coffee Company we take extra steps and use custom
designed equipment to produce the purest coffee possible.
We begin by selecting the finest high grown arabica coffees from around
the world.
Before we begin to roast, the coffees are given an initial cleaning by
a process known as TUBULAR VACUUM SEPARATION. This process cleans
particulate matter off the coffee beans as they are loaded into the coffee
roaster.
We FLASH ROAST our coffee in a fluid bed roaster. Flash roasting causes
the coffee to reach its carmelization point quickly. This insures the
least amount of flavor loss to the beans during roasting. During roasting,
chaff and debris are removed.
As the coffee is removed from the roster it undergoes CENTRIFUGAL
DEGASSING. In order to quickly eliminate volatile gases, we centrifugaly
process the hot coffee. This allows a minimal oxygen interaction at a
critical development stage.
As the final revolutionary step in our processing, we CAP THE COFFEE.
While the coffee is still hot, we seal it in air thight containers. This
allows our coffee to develop our famous full bodied flavor notes withou
unpleasant bitter undertones.
Each step in the process is carefully done by hand to insure the
highest possible quality and consistency. We take pride in our products
and offer a custom cup of coffee - crafted from start to finish by one
pair of hands by belonging to the master roaster and blender.
